SALT of Palmar sits on the sand at Palmar, on Mauritius' east coast just north of Belle Mare. It is adults-only, a member of Design Hotels, and built in terracotta pink and cobalt blue, its colour and pattern shaped by the artist Camille Walala. Fifty-nine rooms are arranged around two pools, a beach lined with filao trees, and a tiled riad courtyard at its centre.
The hotel's character comes from its people as much as its design. Guests can trade time for a local skill through SALT's Skill Swap programme, a morning at the pottery wheel with Janine, or fishing at dawn with Kishor, and eat at The Good Kitchen, where the menu follows whatever the island's farmers and fishermen bring in that day. SALT Equilibrium, the spa, is built around a Himalayan salt room, the first of its kind on the island.
